Grilled squid is a common street barbecue both
in mainland China and Taiwan. It adopts the whole or a half of palm sized squids, bake
them with pepper and other ingredients. Because it allows people to eat and
walk at the same time (you can shopping while tasting delicious food), it is
very popular among shopping people. According to the statistics, almost two
thirds of people in China have
eaten this food. But in different places, the methods of cooking are diverse. Some are cooked like skewers, sold in strings, and others are in sizzling platter. Despite of the various ways of cooking, the raw materials and sauces are always the uppermost things. First, the squids used for cook need to be fresh. Because the good squids always come from the sea, so the grilled squids near the fishing port are usually very delicious. Squid is a particularly healthy food and it is rich in protein, calcium, iron and other trace elements. Eat it regularly can relieve fatigue, restore vision, improve liver function and so on. So the squids of good quality contain more nutrition and are better for our body. Second, good sauce is the heart and the determining factor for grilled squid. Every peddler will have a secret recipe for the sauce, and more special their sauces are, more delicious the food will be. But no matter how mysterious their sauces are, there are only several kinds of basic flavors: spicy, cumin, black pepper and Orlean. People try to give free play based on these flavors and then produce their original works. For me, really Delicious grilled squid is a treasure but hard to find, I have been looking for it all the way.
